Sofie's Birthday Dinner - Spice Rubbed Pork Tenderloin and Pasta

Thanksgiving falls on my daughter's birthday this year and she protested the fact that instead of having both a Thanksgiving holiday dinner and a birthday dinner, should would only one or the other. So, we decided to celebrate our Thanksgiving on Wednesday (yesterday) and Sofie requested her favorite dinner for her birthday-- Spice-Rubbed Pork Tenderloin with a side of Pasta.

I have written many other posts about my Spice-Rubbed Pork Tenderloin. Everyone who tries this dish thinks it is totally delicious and it turned out great for Sofie's birthday dinner as well.

We don't usually serve this with pasta, but Sofie requested it. Sofie likes her pasta either plain with some butter and fresh grated Parmesean or with some sweet tomato sauce. For my wife and I, I made some pesto using fresh basil, parsley, toasted pine nuts, olive oil, lemon juice and garlic and mixed this with pasta and fresh tomatoes.

For dessert, Kelly made apple slices with melted chocolate and caramel.

I didn't start this blog because I am a great cook... I am not.

I do "ok" in the kitchen. I can follow recipes. I have a sense of when things seem to be turning out or not. I can make adjustments on the fly sometimes to save a dish from turning into a bad meal. I do derive satisfaction from cooking a meal that turns out well and for me, a meal turns out well when its healthy and we enjoy eating the food and want more of it and it doesn't take me 3 hours to prepare.

I seem to be pretty lucky in picking dishes to make and having them turn out well and in being able to come up with things my 9 year old daughter will eat. That's how I earned the nickname, "Jackpot Daddy."

I started this blog because family dinners are important to me and making sure we have good food to eat and that we all sit down together for dinner at least four times per week is high on my list of priorities. This blog is a way to share that part of my life with people who know me and to help me keep track of what I have prepared for dinners in the past... very helpful when I am trying to think about what to make and when I made enchiladas last.

Family dinners were a part of my childhood. I think the family dinner is an important and valuable tradition. Its a regularly scheduled event in which we can be with each other as a family.

I generally cook 4 meals per week on Saturday, Sunday, Tuesday, and Thursday. Sunday, Tuesday, and Thursday meals are designed to have leftovers for Monday, Wednesday, and Friday. Sometimes we go out to dinner on Friday or Saturday but not often.
